Soto banjar yang terkenal dari daerah banjarmasin ini berisi daging ayam yang disuwir-suwir, dilengkapi dengan ketupat dan telur rebus.

Soto banjar memiliki aroma dan rasa yang khas berkat rempah-rempah seperti cengkeh, kayu manis, dan pala. Simak resep soto banjar berikut ini.

Bahan Soto Banjar :

1/2 ekor ayam kampung, potong dua
1/2 sendok makan garam
2 liter air

Bahan pelengkap Soto Banjar :

Ketupat secukupnya
75 gram soun kering, seduh dengan air panas
Perkedel kentang
4 butir telur rebus, belah dua
1 batang daun bawang, iris halus
3 batang seledri, iris halus
3 sdm bawang goreng
Kecap manis
2 buah jeruk nipis, belah-belah

Bumbu yang dihaluskan:

9 siung bawang merah
5 siung bawang putih
1/2 buah pala
1/2 sdt merica

Bumbu lainnya:

3 butir kapulaga
3 cm kayu manis
4 butir cengkeh


Cara membuat Soto Banjar :

Campur ayam, garam dan air. Rebus daging ayam hingga ayam empuk. Angkat, suwir-suwir. Sisihkan air kaldunya untuk kuah soto.

Tumis bumbu yang dihaluskan hingga harum. Tambahkan bumbu lainnya, tumis hingga matang.
Masukkan ke dalam air kaldu, aduk rata. Masak kembali hingga bumbu meresap ke dalam kuah.
Tata sebagian ketupat, soun, telur rebus dan ayam suwir di dalam mangkok. Taburi daun bawang, seledri dan bawang goreng.

Siram dengan kuah soto yang masih panas. Tambahkan kecap dan ai jeruk nipis, sajikan.
